Since we have had a fish order before (and I intend to do so again – just to keep thing lively), I thought I’d Include some information.
Different fish can be cleaned and cut in a variety of ways:
- Filet the fish (skin on or skin off)
- Larger fish can be cut perpendicular to the fish (called a ‘steak’)
- Another option is to clean and prepare the fish whole.
Fish Cheeks. Yes, fish do have cheeks and they are spectacular. Generally the larger the fish the more cheeks (example halibut, salmon or (most popular on the east coast) Grouper. These tender morsels are so tender people often compare them with scallops.
